ŌME Taller Gastronómico

The Michelin Guide's review
Located in the heart of the Goya neighbourhood (Salamanca district), just a stone’s throw from the Movistar Arena, and behind the name ŌME lies the concept of duality—one that brings together the contrasting cultural characteristics of Spain and Mexico within a single culinary philosophy. Headed up by renowned chef Roberto Ortiz (who truly shone at the legendary Punto MX), aims to surprise us with two entrances (one of them clandestine, speakeasy-style) and three distinct spaces: the main dining room (featuring a small à la carte of simple dishes to share), a chef’s table (tasting menu), and the crown jewel, the gastronomic bar, seating six diners (the middle seats offer the best view). All of this is designed to be Madrid’s first omakase bar specialising in contemporary Mexican cuisine. As for standout dishes, we really enjoyed a quick bite called the ‘Sope de tinga’, and especially their excellent grilled squab with seasonal mole sauce.
