The gardens are organised around the cloister, Cloître des Charmilles, symbolic centre of the monastery, where four paths, representing the four rivers of paradise, converge at a fountain. This space serves the numerous adjacent gardens, which are separated by trellises, clipped hedges and trained trees. You will notice the presence of three classic elements in every monastery garden: vines, wheat and olive trees, symbolising wine, bread and holy oil.
