Clément Raby from Paris and Estelle Mercier from the Gard: an enthusiastic and welcoming young couple who have managed to turn heads with their creative "cuisine libre" (or "free cooking", as they call it in their restaurant's tagline). The dishes and marriages of flavours are spot on. In their carte blanche set menus, the dishes are announced after you have tasted them so as to better awaken diners' senses.
