Chef Christophe Chiavola, whose CV is star studded, has joined the cast of this lovely 16C castle nestling in ten hectares of grounds. The 4- or 5-course surprise menus showcase his hallmark signature, rich in textures and reductions. Outstanding ingredients, including from the estate’s organic cottage garden and orchard. Paired with wine from the nearby Domaine de la Guicharde, which also produces the organic olive oil used in the kitchen. In summertime, take a seat in the castle’s magnificent courtyard, where a fountain plays, and admire the garden.
