As both a cook and an angler, Kenichi Nemoto has an abiding love for the sea. In his set menus the eye is immediately drawn to the fish dishes. Consider, for example, the conger eel frites and celeriac – deep-fried in a nutty batter, this dish is a delight of texture and fragrance. Nemoto also uses unusual fish that are delivered to him directly, ones you won’t see at the fish market.
