With a single bowl, Yasufumi Matsumura shows you the evolution of ramen. The soup uses no sauce, instead relying on the flavour of duck, free-range chicken and vegetables and the salt tang of dry-cured ham – taking a page from the preparation of consommé in French cuisine. The name suggests setting sights high for constant improvement by suggesting the halfway point when climbing Mount Fuji.
