Here, amid a delightful atmosphere combining the past and present, the chef creates intensely flavoured, contemporary-style cuisine based around dishes once prepared by his mother. Ingredients are sourced from the surrounding area, including their own kitchen garden, where they keep chickens and bees and grow shitake mushrooms and other vegetables.
