Sébastien Tantot, after seven years next to Gérald Passédat at the Petit Nice, has already made a name for himself in this picturesque inn (stone, beams, fireplace) in a medieval village on the Pierrefonds road amidst the Compiègne countryside. In tribute to his time in Marseille, the chef adores working with fish, vegetables, gutsy sauces and olive oil.
