Chef Sébastien Tantot (previously Gérald Passédat's executive chef at Le Petit Nice) is thriving in this attractive "inn" (with bare stone, beams, fireplace). Located on the road to Pierrefonds, it lies in the Compiègne Forest, in a medieval village. As the set menus (95% vegetarian) illustrate, the chef is particularly fond of vegetables, fruit and aromatic plants and herbs from his kitchen garden, showcasing them in refined and balanced cuisine that is also visually appealing, a case in point being the bold montage of strips of raw button mushrooms and foie gras with cubes of eel.
