With a name like Gordo’s, you can be sure that portion size isn’t an issue. Of course, nobody is complaining, thanks to the talents of Chef Reyna Morales, who hails from Mexico City and whose careful handling of familiar favorites goes a long way.

For quesadillas, a layer of cheese is griddled into the tortilla and then served open-face, piled high with roasted poblanos and sweet corn.
