Heddon Street may not quite resemble a side street in Seville but it can sometimes lead to serendipitous discoveries. Sabor is the brainchild of chef Nieves Barragán, and she has created something authentic and truly joyful with co-owner José Etura, who has assembled a charming service team. There are three distinct areas: on the ground floor is the bar and opposite, a counter serving tapas from all over Spain. Upstairs is El Asador, the only area for which bookings are taken; here you sit at communal tables enjoying specialities from Galicia and Castile. There are two must-haves: succulent Segovian suckling pig – quartered, halved or whole – and roasted in the specially built oven, and the melt-in-the-mouth octopus cooked in vast copper pans. You’ll be licking your lips for hours.
