At Le Rossignol (which is French for nightingale but also happens to be the chef's name), Willy Rossignol finds a captive audience for his smooth classical repertoire of indulgent, flavoursome and well-balanced dishes, prepared using fresh ingredients. Mara, his wife, extends guests an attentive welcome in the simple, well-kept space or out on the terrace in fine weather. Dishes to try include the Gragnano paccheri with wild mushrooms with an aged Parmigiano Reggiano gratin, or thinly sliced chamois with Kampot pepper.
