Self-made chef Jermain de Rozario continues to streamline his vision. Although his earlier playful approach is now toned down somewhat, he has retained his own inventive style vis-à-vis Asian seasonings, adding Indonesian twists to traditional French cuisine to create dishes which know no boundaries.
This talented chef’s vision is evident in every corner of the restaurant. The urban panache of his new location works right down to the very last detail, from the music and plants to the bamboo decor. The same is true of the cuisine, which includes favourites such as his spicy, aromatic Rendang signature dish which is combined with the sweet finesse of mango ice cream. De Rozario especially enjoys expanding his horizons and exploring his Asian roots in greater depth, as demonstrated by the petjel that is served with your bapao roll. Jermain de Rozario’s journey is a compelling one.
