In the Guibet family, the reins of this former hunting lodge (1886) have been passed to Guillaume, who is following in his father's footsteps. His clever and creative cooking looks to the seasons, sometimes draws on Asian traditions (not surprising, since he worked at Kei, in Paris), and is always convincing. One fine ingredient prepared with skill and finesse comes after another, as in the perfectly seasoned fresh ceviche of gilthead sea bream, or the lovely medallion of sweetbread enhanced by a gourmet garnish and intense jus. The same dynamism is apparent in the decor, with its elegant wood, leather and metal fittings.
