Run by Richard van Oostenbrugge and Thomas Groot, the renowned duo behind Restaurant 212, this is a bistro of the old school. As you enter this charming, lively place in the bustling Utrechtsestraat, you receive a warm welcome from the chefs, and delicious aromas waft towards you. You quickly get the feeling there are no obligations and yet anything is possible. The entire à la carte menu is a real treat for any foodie.
The chefs are not afraid to use lesser-known ingredients such as oxtail and zander. The intensity of their no-nonsense dishes makes a convincing case for why this overlooked produce is deserving of more attention. Veal kidneys, for example, are served with an irresistible creamy sauce based on a veal stock with a shellfish jus. The zander is candied in smoked butter, topped with zolderspek (smoky bacon) and goose liver, and combined with roasted quince and the strength and acidity of sauerkraut.
