A restaurant of solid tradition, born in the early 1990s from the vision of three brothers from the Marche region – Angelo, Giuseppe, and Massimo: the first at the stoves, the others in the dining room. Over time, this establishment has become a benchmark in Roman dining thanks to a cuisine of strong authorial character, presented through two elaborate tasting menus – one entirely dedicated to the vegetable world. These menus can be adapted in length and are structured by seasonal rhythms and a constant dialog with Italy’s gastronomic roots. Iconic dishes are available to complement the experience, such as the celebrated “Amatriciana dei Troiani,” on the menu since 1996, or the local lamb. In the cellar, some 3,600 labels form a monumental wine list, featuring vertical selections dating back to the 1990s, true rarities for connoisseurs and collectors. Thanks to Coravin, several of these gems can also be enjoyed by the glass.
