“Shall we get a bottle?” is something of a recurring theme when Pierre Guérin and his mates get together. This idea of a fine glass of wine in good company is the keystone of this friendly bistro, to which the chef adds uninhibited bistronomic cooking, presented in an excellent lunchtime menu and à la carte in the evening. Deftly crafted, respectful of the ingredient and spot on every time. For example, the chef might add a kick to pork, spinach and purslane in crispy puff pastry courtesy of a red wine and wholegrain mustard jus, a blend of spices and chickpeas. Rather than unnecessarily complex or fussy frills, you can expect to taste bold, reassuringly recognisable flavours.
