Easy to locate in Moraira’s old quarter, opposite the church of Santa Maria dels Desemparats, this small bistro is run by a young couple, with Uruguayan chef Germán López behind the stove and sommelier Sandra Rausell in charge of the dining room (Carvón is written with a ‘V’ (instead of ‘Carbón’) for her, as a nod to the importance of the wines in their offering). Here, the product and the grill are the main protagonists, as they propose an updated regional cuisine that, using fire as a means of expression, seeks to celebrate the flavours of the Mediterranean culture. You will find fantastic Rubia Gallega beef, wild fish from the fish market and a whole host of dishes to share!
