The Michelin Guide's review
De Cuijt is the personal project of chefs Yuki and Koen, with a warmth all of its own. Since 1914, this has been a favourite spot for sharing life's pleasures, a tradition the couple are now continuing in their own way. The bright interior has a serene feel, and the slightly secluded terrace is charming. The two chefs met while working in the kitchen at Jordnær in Copenhagen. Their experience and personalities come together in dishes rooted in French cooking, with creative ideas and subtle Korean nuances. Technical finesse and a particular focus on sauces give the cooking remarkable depth. Their lobster dish is a true signature: a perfectly cooked, lightly smoked lobster tail comes with an intensely creamy brioche roll that has been left to rise for 48hr, plus a classic beurre blanc enhanced with elderflower, Korean spices and gochugaru oil for measured heat. Exuberance is distilled to its essence here, resulting in a memorable interplay of flavours. Whether you opt for the set menu, lunch or go à la carte, this remarkable duo put their distinctive stamp on the experience from beginning to end.
