The Michelin Guide's review
With his finger on the pulse of Málaga, halfway between La Malagueta beach and the Centre Pompidou, chef José Carlos García is embarking on a much more intimate chapter without straying from his narrative, whilst incorporating new nuances. In fact, everything revolves around one unshakeable idea: ‘Now, Free.’ From the historic setting of the legendary Café de París, where he began to build his reputation more than two decades ago, he is now pursuing a more intimate and personal project, whilst remaining true to his identity. His goal is to evolve freely, exploring new ways of understanding cuisine and hospitality (his wife, Lourdes Luque, runs the dining room). Culinary-wise, it continues to offer its unique reinterpretation of Mediterranean cuisine and the traditions of Málaga, with options ranging from à la carte dishes (one iconic dish being sea bass with liquid potato gnocchi and gazpachuelo made from its bones) to a tasting menu, with the ingredients always taking centre stage. The wine cellar here places a special emphasis on white wines!
