In charge of the kitchen, Florian Wörgötter represents the third generation of the family and now runs the establishment with Julia Mausser, his partner. His reasonably priced five- or seven-course surprise menu features carefully considered, elaborate combinations with interesting contrasts and aromatic complexity. One example combines exceptionally fresh tuna sashimi with mildly spicy jalapeño gel, basil mayonnaise, pickled Roscoff onion, fermented preserved lemon, pickled Cornelian cherries, dried Grazer Krauthäuptel lettuce, Krauthäuptel "snow", ponzu, roasted peanuts, Mexican mini cucumber, basil oil and verbena oil. There is a well-curated wine list, and the harmoniously matched wine pairings by the glass are recommended with the set menu.
