This 14C castle is brimming with character, and a meal here promises an experience beyond compare. With its wooden floors, medieval paintings and old stone walls, the setting couldn't be more enchanting. The waterside terrace overlooking the verdant surroundings is an absolute delight! Dave Beckers's approach is refreshingly modern and his sophisticated creations frequently feature flavour profiles based on koji, yuzu and koshi. For instance, he adds extra depth to his lamb fillet and crispy braised lamb neck by incorporating powdered seaweed into the potato mousseline and kombu into the rich lamb jus. This is easy-to-enjoy cuisine that also pushes boundaries. An overnight stay in the castle makes for the ultimate grand finale.
