A fine-dining restaurant, the name of which pays homage to the culture of the countryside, the omnipresence of Argentinian meat and, above all, to the former Liniers livestock market where workers and breeders worked together like a family for generations. It is located in the extensive and lively Palermo Hollywood district and occupies a modern setting (a bell must be rung before you can enter) that now features an open kitchen facing the dining room. It used to be a workshop, which is why it still has a certain industrial feel to it. Chef Dante Liporace, with European influences in his culinary identity, offers a rather eclectic cuisine, as he uses local products as a foundation for his elaborations of European and Asian recipes. The affordable Mediodía menu stands out, with alternating dishes such as provolone pizza, ramen stew, crêpes Suzette, beef tongue with black béarnaise sauce, and even a Milanese served with homemade kimchi carbonara.
