Roux, with its corner entrance and terraces on both sides, is a fine-dining restaurant that reflects Mediterranean influences and has a distinct character of its own. Chef Martín Rebaudino who, as part of his career path, travelled to Europe and had the good fortune to share a kitchen with legendary Spanish chefs such as Martín Berasategui, Juan Mari Arzak and Pedro Subijana, offers an extensive contemporary-style à la carte with French, Spanish and Argentinian influences that includes an appetising array of hot and cold starters, delicious risottos, and top-quality red meats. There’s a good set menu on offer as well. The chef, who is present during every service, shows the utmost respect for the ingredients and their seasonality, but also seeks to highlight his ongoing commitment to local producers; this is why he makes a point of indicating the provenance of the ingredients on the dishes, including the name of the farm and its province of origin.
