It is surprising to find such a restaurant in the countryside (located about 3 km south of Bermeo), inside the charming hotel Nafarrola, which has recovered the magnificent farmhouse of the same name. Behind the term Rola, with which they use locally to refer to a log or a piece of wood, they seek a perfect symbiosis with the environment around them, the beautiful Urdaibai Biosphere Reserve. Here, in a space of elegant rustic minimalism that fascinates with its views of the valley and the sea, chef Gaizka Goikoetxea focuses his proposal on a unique tasting menu that evolves with the seasons, inspired by the ecosystem of Urdaibai and demonstrating both the traceability of the best nearby produce (many from his own vegetable garden) and his commitment to the environment. Everything is delicious, but we recommend you try the Bermeo hake, with its citric collagen and clam pil-pil. Also, it is not a bad spot to discover the txakolis of Bizkaia, as they offer more than 30 different types!
