Take a small space, cool service staff, as well as a wildly creative kitchen and what do you get? Himitsu, naturally. Perhaps it should come as no surprise that it continues to garner so much buzz as it is exceedingly more fun than your average spot, and ergo, another notch in the belt of DC’s dining scene. Lines form long before the door opens, but if you’re lucky (or patient) enough to snag a seat at the bar or one of the snug tables, you’ll find a fun and inventive menu that takes inspiration from, well, everywhere, but has a palpable Asian bent—picture the likes of silky congee and Japanese eggplant dressed with a chili-lime vinaigrette. Charred carrots on a bed of creamy robiolina are outrageously good and warrant a return visit.
