The liquid is more than artwork, though, and oenophiles and newbies alike will find satisfying sips. Proof's food reflects an international point of view-envision flaky and glistening flatbread topped with chickpeas, red onion, green olives, pickled radish and a silky, smoked eggplant emulsion; or spicy chicken and pork meatballs paired with ricotta ravioli. If you manage to leave room for dessert, consider forgoing something sweet and instead sink your teeth into a selection from the comprehensive cheese list.
