Amidst the pricey boutiques and top-dollar restaurants of Hayes Valley, a good deal can be hard to come by. However, Tsubasa is a delightful exception, offering well-made nigiri, sashimi and maki at a price point that belies the high quality of its fish. The sleek dining room offers table seating, but the best seats in the house are at the sushi bar, where you'll be presented with generously portioned nigiri that range from cleanly flavored turbot to intense, vinegar-kissed saba (mackerel). There are also more elaborate maki, like a salmon and avocado roll topped with raw scallops and miso sauce. But the deepest pleasures are simple ones: excellent miso soup, a tuna roll with beautifully seasoned rice and rich, custardy tamago.
