From the Haute - Loire himself, François Gagnaire carefully selects small - scale farmers from the area, kitting himself out with excellent raw materials for his cooking. Puy lentils, limousine des Monts - du - Velay and fin gras du Mézenc steaks, fromage de vache aux artisous (cow's milk cheese) and Vellavia beer... His dishes are tasty and superbly presented. A real treat.
