This Japanese restaurant close to the Palais Royal is a confounding and exciting proposition. The chef turns out Japanese cuisine using quality French ingredients. He makes good use of binchotan (a white charcoal) for cooking, and unveils delicious concoctions that are exceedingly refined, if not downright minimalist. Excellent list of champagnes and sakes.
