Chef Marco Prins has taken over the dining room next to Jewel Bako (formerly the home of Degustation) and put together a menu that combines his personal story with his culinary experience—from Brooklyn Fare to Spain’s acclaimed Martín Berasategui. This diminutive space is hardly enough to contain his talent, but the up close and personal vibe feels very downtown and tuned in. Razor clams prepared with Indonesian-inspired accents speak to Chef Prins' Dutch heritage. Also a testament to his remarkable abilities are the pristinely prepared fish items. The five-course tasting menu is a great value, unveiling a beautifully composed striped bass with tom kha-inspired coconut sauce and fried fish skin for an inspired and crunchy garnish.
