Griddled halloumi with raw sugar snap peas bathed in a wild garlic vinaigrette is a standout starter, while grilled blowfish tails are smoky and tender, coated with black sesame- and herbed-citrus breadcrumbs. A smear of black garlic aïoli adds extra oomph. But the do-not-miss dish? Braised Colorado lamb neck.
