Chef Mario di Chiara knows a thing-or ten-about Italian fare: you can't miss with items like cannelloni gratinati al profumo di tartufo, a homemade pasta plump with veal and carrot, baked in buttery béchamel and kissed with truffle oil; or pollo spezzatino alla pizzaiola con salsiccia, a rustic chicken stewed in a light-as-air tomato sauce pocked with sweet porky sausage and roasted peppers.
