A10 is a highway that winds through the Italian Riviera, but its detour through Hyde Park comes courtesy of prolific restaurateur, Matthias Merges. University of Chicago students and staff populate this split space, building a buzz over marble-topped rounds in the low-key bar area or dark wood tables in the convivial dining room. Elegant presentations and ambitious creativity set this kitchen apart. Dishes deftly balance the rustic and sophisticated at a fantastic value, as in the pretty composition of charred and lightly blanched carrots over ricotta that is tinged pink from beet juice. Grilled salmon is beautifully cooked, flaky yet crisp-skinned, and served alongside creamy potato confit and large chunks of pickled cauliflower and carrots.
