The sky-high copper bar is stacked with glass specimen jars and attended by mad-scientist mixologists, assembling clever sips like the Call Your Mother (mezcal, green chili vodka, and celery root). Meanwhile, the décor resembles a chic library, with leather-bound tomes and vintage filing cabinets. The food churned out of this kitchen is executed with originality and scientific precision, from scallop ceviche accented with yuzu, chili, and topped with a tempura chip, to a plump rabbit sausage with rye berry risotto. Quirky sweets include a cucumber parfait with peanut meringue and strawberries.
