Even something as basic as that Superbowl Party go-to, queso fundido, finds revelation under his deft guidance—this version is infused with sweet honey, earthy chilies and grassy pumpkin seed. Then, tender, shredded chicken tinga tacos find their true potential in a wickedly good, smoky adobo sauce; while toasted chilaquiles are paired with fideus, green mole and crema.The restaurant's design is bright, airy and modern, with light-flooded windows and and tables tucked into comfy banquettes.
