Chef Mark Garcia isn’t your typical chef. This Chicago-born itamae definitely has his own ideas about sushi; thus the name, which translates to “outsider. ” Alas, Queens needs Garcia and his eats, so he’s definitely "in. " Displaying a deft hand with garnishes like sweet Fuji apples, smoky, spicy roasted banana peppers and mushrooms brushed with chive butter, the chef’s approach is definitely inventive. Yet, the food never feels contrived and his respect for fish (flown in regularly from Japan) is unwavering. Reservations are a must, as there are just nine counter seats and a sprinkle of tables in the back. Typically packed with locals, expect commuters from other boroughs to snag in-demand seats as this kitchen's reputation grows.
