The chef concocts his meticulous cuisine, adding the odd bold twist here and there that he always pulls off with great skill, as can be seen in his grilled scallops, lentils, Granny Smith and smoked bacon; Vendée duckling, olive purée with black garlic, parsnip croquettes, passion fruit vinaigrette...
