In the heart of historic Lyon, Jérémy Galvan has set up shop in one of France’s most Michelin starred streets – Rue du Bœuf. Born in Savoie, the chef's path took him as far as Quebec. A grandson of market gardeners, this locavore, who takes the need to protect the planet and farmers very seriously, also grows his own produce. Inspired by nature, his creative cuisine (one surprise set menu) is now something of an artistic experience. Calling upon the five senses, it includes music and the four elements, and is as daring as it is show-stopping! The pared-down interior is perfectly matched to Jem’s ethos as peacock blue is contrasted by splashes of bronze in reference to fire. An experience that must not be hurried!
