There’s a new head of the kitchen team at the Il Parco di Villa Grey restaurant, where the gourmet menu focuses almost exclusively on fish. Although firmly rooted in the region, the chef’s dishes also show influences from his native region of Puglia, while the two tasting menus will satisfy even the most discerning palates.
