This is the Union of British chef Phil Howard (The Square then Elystan Street in London) and Martin Cuchet, a French friend who is mad about the mountains. From December to April, they serve delighted diners food in a simple and generous vein that goes hand in hand with the seasons: for instance, brandade, egg and truffle, and rhubarb fool, in a nod to the chef's origins. A treat.
