At Sawa Sushi, Chef/owner/server Steve Sawa will craft your omakase and then deliver it to you at the sushi bar. Chef Sawa may be deeply dry and his restaurant borders on dingy-the fish cases are empty and plates may be chipped-but you've got to hand it to him: he's made plenty from nothing for over a decade now. Without a reservation, the chef may question your motives. He may also mention that his super secret recipes come at a premium and are served omakase only. Take a cue from the full house and go with the flow. You'll be treated to the freshest fish even if his sometimes sloppy knife skills leave something to be desired. Expect unique items like slow-poached tuna belly in ponzu, and fresh shrimp topped with creamy uni and sea salt.
