- The signage may be spare, but the Bank of America tower's ground floor windows are sure to reveal Aureole's bustling scene within. Find casual bar dining in front, and a more intimate and muted back room with upholstered banquettes and shimmering pillows. The large mezzanine is dedicated to displaying a bright wall of wine. Few restaurants attain the consistency of Aureole: dining here is a pleasure from start to finish. The contemporary menu may highlight the global influences of ruby red shrimp with coconut, lemongrass, and Asian pear. Presentations are attractive and enticing—silky pockets of pasta squares are delicate enough to see the spoon-tender short-rib filling inside. Nutty ribbons of pecorino, roasted chestnuts, and pomegranate droplets bring tart and earthy complexity to this excellent dish. Fish is beautifully cooked, as in golden-crisped skin branzino set atop an emerald green herb purée, dressed with shaved fennel, red onion, and a scattering of dandelion leaves. Starry-eyed dessert lovers will find their bliss in the gianduja : hazelnut cake piped with bittersweet chocolate ganache, served with a chocolate mousse-filled caramelized tuile and chocolate-hazelnut ice cream.

Cadre contemporain et chic de l'établissement mais pas "bling bling". La salle à manger est cosy. L'accueil est agréable et le service particulièrement de qualité. Côté assiette, le tartare de thon reste classique, malgré la note "moléculaire" avec la sauce en forme de jaune d'oeuf, et il est très bon. L'accord mer-terre avec le sandwich st-jacques/foie gras est particulièrement réussi ; le contraste moelleux croquant est également agréable dans ce plat. L'esturgeon est savoureux et la venaison de bonne facture. Bon dessert et carte des vins riche. Ce restaurant nous a particulièrement bien plu, il mérite son étoile.
Le prix des vin est tout de même assez élevé.
