- On the outside, nothing screams unique about this spot. But, it is sage to never judge a book by its cover, so stay awhile. Amid construction sites, parking lots, and traffic, find warm and demure Sugiyama. Make your way inside its narrow hallway to a warm, welcoming earthy-toned haven replete with rock gardens. Transporting you further into Japanese comfort are bamboo lamps hanging from boughs and an open kitchen starring the master Nao Sugiyama, as he moves in slow, steady precision. Perhaps observe him preparing a modern kaiseki including monkfish liver, braised baby squid, and snow crab-radish roll. Smoky toro and creamy uni are presented beside a fragrant red snapper dashi and followed by wonderful Wagyu beef paired with garlic chips.
