Nouveau chef en cuisine avec une attention particulière donnée à la qualité des produits "de base" et à la révélation de leur saveur (pas de complication excessive)- lotte safranée et artichauts, dorade lardée d'algues sur un lit de salsifis, carpaccio de homard servi dans des petits oursins pour la mise en bouche. Très bon conseil pour le vin (Cassis) sans chercher à faire gonfler l'addition.
