Zunächst: an der hohen Qualität der Küche hat sich nichts geändert. Nach Jahren war ich endlich einmal wieder zum Gänseessen in der Hanse-Stube. Ein Muss! Das Ambiente ist HANSEATISCH, was sonst? Und die Weinkarte bietet ausreichend Auswahl zu sehr fairen Preisen. Edle Umgebung, tolles Essen, deutschen Wein aus Toplagen. Sterneklasse, wenn nicht...
... der Service wäre. "Bemüht" ist das freundlichste, was mir einfällt. Der Maître wirkt oft unsicher, fast hilflos im Umgang mit Gästen, die Abstimmung mit den Commis stimmte überhaupt nicht. Die Vorspeise wurde einmal komplett falsch und beim zweiten Mal teilweise falsch serviert (die bereits vorgesetzten Teller wurden dann zum nächsten Tisch gebracht). Das Tranchieren erfolgte sehr routiniert, aber Sonderwünsche eines Gastes wurde erst einmal ignoriert. Dinge, die das Gesamtbild sehr trüben.
