Miroir
Emmanuel Tresmontant-2009-12-01
Miroir (Mirror), a simple name. Straightforward and to the point, just like the food and the service offered by this new, highly-recommended, bistro.
To get there you’ll need to walk the length of la rue des Martyrs in the Abbesses neighbourhood of Montmartre... A beautiful stroll with the magnificent tree-lined l’avenue Trudaine on your right and the 'wildlife' of Pigalle on your left.
Opened a little over a year ago, Miroir is a small place that is not quite like the others, think egg mayo and blanquette of veal... the cuisine here is structured, creative, inspired and designed to showcase exceptional produce such as Iberico pork belly from Eric Ospital [a renowned supplier who probably produces the best ham to come out of the Basque region!): a delicious dish that manages to be both melt-in-your-mouth and crunchy in a way that will leave you stunned.
Miroir is masterfully led by two friends. One, a sommelier who worked at La Tour d’Argent. The other, a chef who learned his trade working for Alain Ducasse at Aux Lyonnais on rue St-Marc in the 2nd arrondissement. Swordfish tartare with creamed fennel; pan-fried foie gras with spiced red wine, pan-fried chanterelle mushrooms, boiled egg and vinaigrette; farmer's chicken with ceps, roasted figs with port and crème citron... Simple treats dished up in an unhurried atmosphere with the chance to sample some excellent wines served by the glass such as the very nice, organic pouilly fume de Jonathan Pabiot ("a future 'Grand' from Loire" the sommelier tells us). Menus are priced at 32€ for three dishes or 25€ for two, with a formule rapide (one dish, a glass of wine and a coffee) priced at 18€.
